Japanese Matcha -
Green Elderberry Currant Ice Cream

Metric American Ingredients
50 gr 1.5 oz Elderberry Currant Tea
16 gr 1/2 oz Japanese Matcha Green Tea
     
750 gr 26.5 oz Heavy Cream
750 gr 26.5 oz Milk
     
10 pc   Egg Yolks
150 gr 5.0 oz Sugar

Preparation

Mix Elderberry Currant Tea with Japanese Matcha Green Tea.
Mix with milk.
Heat milk to about 155 F.
Let infuse for about 1/2 hour.

Strain to remove Tea leafs. Add sugar and egg yolks. Bring mixture to nappe or rose stage and stain. Place over ice bath and add heavy cream.

Let rest for several hours and the process ice cream in ice cream machine.

Serving suggestion

Serve with an apple frangipan tart.
